You don’t even need to peel the potatoes for this recipe, just wash them well and pat dry with a paper towel. Then cut your potatoes into small cubes (about 1-inch pieces). Onion: Yellow onion, thinly sliced. Eggs Olive Oil Butter Salt & Pepper  Optional: your favorite herbs and spices for seasoning (such as paprika, garlic powder, spring onions, or dried parsley).

How To Make Potato and Eggs Breakfast

1. Place potatoes in a small bowl and microwave for 3 minutes to soften.

2. In a nonstick skillet over medium-high heat, fry potatoes in butter and olive oil for 3-4 minutes until golden.

3. Add onions and cook for 2-3 minutes until caramelized.

4. Lower heat to medium, create two wells and cook 2 eggs to your preference.

5. Season, garnish with spring onions, and enjoy!

Prep Time 5 minutes Cook Time 10 minutes Total Time 15 minutes Ingredients 8 oz (225 grams) Potatoes (any potato you like, I use Yukon golds) 1/2 yellow onion (sliced thinly) 1 tsp olive oil 1 tsp butter 2 large eggs salt & pepper to taste Instructions

1. Add diced potatoes to a large bowl and microwave for 3 minutes to soften them.

2. Heat a large nonstick skillet over medium-high heat, butter, olive oil, and potatoes, and fry for 3-4 minutes until slightly golden.

3. Add in the sliced onion and cook for 2 minutes until slightly caramelized.

4. Reduce the heat to medium heat, make two wells in between the pan-fried potatoes, crack 2 eggs, and cook until the eggs are done to your liking. (You can leave the egg yolk slightly runny but make sure the whites are cooked)

5. Season with salt & pepper and garnish with some spring onions, serve and enjoy!
